cutie marmalade...
I started w/half a bag of old Clementine Mandarines or "little cuties" or just "Cuties" (over some trade mark dispute???) as they market them here in CA… nationally… and probably to all the Costco stores around the globe... gathered into one of many large plants w/one very visible on the I-99 north of Bakersfield...
started w/about a dozen older "cuties" cut into (8) eight pieces each... smaller than bite size... add to saucepan
add water to the level of the fruit
this is about a cups worth of water and fruit so add a cup of sugar... Granulated or Brown... the point is to cook off most of the water allowing the sugar to thicken... you will need to watch this closely at the end and monitor the thickness which you want similar to honey... turn away for too long you will be beyond syrup... a hard crystal block of WTF did I just do... lol
w/the sugar add in… (I added spices first)
1/2 tsp ground clove
1/2 tsp cayenne pepper
1 tsp dried thyme
cook down at a low heat to a nice frothy bubbling... this is the time to watch and add more sugar if needed...
when thick enough... let it cool and jar up for the refrigerator...
I add a spoonful in my morning coffee... very yummy





What a great idea! Did you know that marmalade was invented by the wife of an English grocer who bought too much of the "wrong" (bitter Seville oranges) oranges in 1772?
I made a great batch of bitter orange marmalade a few months ago here- delicious! I've also made (thank you Mr. Ottelenghi!) a cumquat marmalade with star anise...!
