NO Sugar ice cream
for real... no sugar added
1 quart heavy cream
1 cup buttermilk
1 pint fresh blueberries
tbsp fine chopped fresh rosemary... and mint each
2-4 ounces Barbados Rum (or any brown spirit of your choosing)
hefty tsp of pink salt
7-8 egg yolks
separate out egg yolks
while heating heavy cream... herbs... salt... blueberries
to about 160* F
whisk in eggs slowly (as not to have the cook and lump up as scrambled egg)
until the mixture thickens... then add buttermilk and spirits into whisk
cool down before putting in your ice cream maker...
I use a Whynter machine w/a built in compressor... it was may newest foodie sextoy delight... for those who love the sport... buy one fully loaded w/self freezing capabilities... the hardest part is packing and cleanup which is the case regardless...
Truly a dream machine... whip up the creme anglaise... cool and pour... set it for 60 minutes... usually done...
This was designed for a Keto diet... whether it is legit or not??? for I am not an expert in that as far as size portions etc.
keeping this in mind to add a bit of sweet for those who crave I topped
