when Mozzarella is made it is heated and stirred in a large pot by adding lemon juice or vinegar (an acidic element) to make the curd stringy... stretched and then sized and placed on a cookie sheet or hotel pan... the little family joints that make it never refrigerate the product... it is made... displayed... sold immediately to be eaten fresh to the table... the closest analogy would be a cheese sandwich cold... uncooked... verses the grilled cheese... one of my favorites... lol put it in the refrigerator for tomorrow... cold... certainly not the same...

no that is one area I have yet to tackle... cheese making... although it is one of my favorite delicacies... like anything you need all the right elements to complete the task... then the storage of time in a cool location... especially for the aged wheels... I am spoiled by all the yummy stuff I can find at very reasonable prices... I have learned all cheese can be frozen w/out any real deterioration to the end result... things like ricotta can be a bit grainer however use it in cooking and you will not tell the difference... I have freezers full of cheeses I purchased pennies on the dollar b/c of "sell by date" ready to expire... in fact I am having a Président Camembert... 8oz wheel... I paid one dollar for it... now w/my morning coffee... you can't tell one bit it came from the freezer...

now homemade bread is another story... that is too easy and too fattening... lol

Gosh thank you so much for the education on cheese! I live in rural California so any fresh cheese I purchased Hass to be done in San Francisco or Los Angeles. Although because of the many dairies in this vicinity there are individuals who make their own cheese. A good friend of mine makes artesian cheese up in Coarsegold California. Goat and sheep’s cheese etc. It’s such a treat when she gives me some. Cheese is actually my favorite food. I’m going to take your advice and purchase it pennies on the dollar and store it in the freezer. Can you store mozzarella this way as well? Thank you!

I get my deals from a a grocery chain called Costless... I find them at the Jackson Location... usually once a week they have these deals... too numerous to mention really... 5# bags of Stella Blue for $4.95 each... I bought 35# how can you go wrong w/that??? tons of goat cheese Vermont Creamery stuff... really remarkable deals... last trip 5# PollyO ricotta... $1.98... like eating ice cream!!! haha

they have great meat sales that I buy for my dog and cats... chicken legs $0.58 a pound... they love the raw drumsticks... for which you can feed RAW chicken as the bones do not splinter... rural CA is a big place... WinCo is another good place to shop if one of those are near by... they have a bulk food area... everything by the pound... peanut butter is just ground peanuts you grind to order... $1.98 #... no sugars or additives... mix a little molasses and flax seed touch of cayenne and you have a natural candy???

and yes mozzarella and burrata too... freeze up nicely in the liquid they come in... happy hunting... even better feasting!!! lol

Thank you! I don’t believe we have those stores around here. There is a Winco up in Visalia which I occasionally shop. We have an Aldi‘s with reasonably priced cheese. But usually I stop at the grocery outlet to get cheese and meats like you describe. But not in a big box. It’s nice to know you can freeze them so in the future I can purchase a few extras. Thank you so much for all the details.
